Sugarcane juice has long been a familiar part of daily life in Vietnam. When bringing this drink to the U.S., we realized that both overseas Vietnamese customers and local guests were looking for fresh sugarcane juice as a natural, refreshing drink.

The Sweetness of Sugarcane Begins in the Fields

In the early days of building Mía & More, we used to think that finding large, good-looking sugarcane stalks was enough to make a delicious cup of sugarcane juice.

But the more we worked alongside local farmers, the more we understood that the quality of Vietnamese sugarcane is shaped by many factors behind the fields.

Everything from sugarcane variety, soil conditions, irrigation, and harvest timing can affect the flavor of the sugarcane. Studies on sugarcane show that proper sunlight and growing conditions play an important role in how the plant accumulates natural sugar inside its stalk.

According to reports by the Food and Agriculture Organization (FAO), climate conditions and growth cycles directly affect the sugar accumulation of sugarcane. That is why sugarcane grown in the same area can still have different quality and sweetness levels when harvested at different times.

Through those hands-on field visits, we realized that not every sugarcane variety is suitable for creating a cup of sugarcane juice with a true authentic flavor.

Some varieties produce plenty of juice but do not have enough depth in flavor, while others offer a better color and a more pleasant aftertaste when made fresh.

That is why, instead of simply purchasing readily available ingredients, Mía & More chooses to work directly with local farmers to build our own ingredient standards.

From selecting the right sugarcane varieties and monitoring the farming process to choosing the right harvest time, every step is focused on one shared goal: preserving the natural sweetness of Vietnamese sugarcane before the ingredients enter the preparation process and are transported to the U.S.

How Mía & More Preserves Sugarcane Juice Freshness from Vietnam to the U.S.

To create a cup of sugarcane juice with an authentic flavor, selecting the right ingredients is only the first step. What matters even more is how we preserve its freshness throughout the entire journey, from our Vietnamese sugarcane fields to our stores across the U.S.

Right after harvest, the sugarcane stalks are washed with RO-purified drinking water, then peeled, cut into sections, and the Sugarcane Nodes are completely removed.

This labor-intensive step plays a very important role. Sugarcane Nodes often contain tough fibers and compounds that can create a bitter aftertaste or make the juice color darker after juicing.

Removing them helps create a cleaner flavor, a more naturally vibrant green color, and helps minimize oxidation during storage.

After this initial preparation step, the sugarcane goes through the first round of hand sorting before moving onto a conveyor belt for a second inspection. Only sugarcane sections that meet our standards for color, freshness, and quality are selected for packaging.

Next, the sugarcane is moved into a closed-loop blast-chilling system using Cold Fresh technology. This process helps lock in the sugarcane’s natural freshness, helps reduce moisture loss, and helps preserve the signature flavor of Vietnamese sugarcane throughout transportation and storage.

Next, the sugarcane is moved into a closed-loop deep-chilling system using Cold Fresh technology. This process helps lock in the sugarcane’s natural freshness, reduce moisture loss, and preserve the signature flavor of Vietnamese sugarcane throughout transportation and storage.

However, keeping the ingredients fresh in cold storage is not the final step of the journey. To preserve the authentic flavor of sugarcane juice freshly made cup by cup, Mía & More follows a strict Press-to-Order standard across all locations – making each cup only when customers order.

For every order, the chilled sugarcane sections are placed directly into the exclusive Mía & More sugarcane juicer right at the counter. This process helps each cup of Mía & More sugarcane juice keep its natural jade-green color, signature fine foam, and lightly smooth texture of freshly made sugarcane juice.

At the same time, customers can see the real ingredients and the entire transparent preparation process right in front of them.
